How could it be Fall already?
Tell me how this happened. I was just looking at the calendar and counting the weeks before we head south to our winter destination in Texas. Really, it was weeks away. Yet now, only days away before we leave for warmer weather.
I love my home state of Michigan. In my 60 years in this state, I’ve learned to navigate the snow and ice without too much trouble. But given a chance, my husband and I will make the choice to head south and escape the colder weather for which Michigan is deservedly well known.
My Crock pot is for all seasons!
I use my Crock pot year round. I use it for all types of dishes: desserts, appetizers, complete meals for two or a meal to feed a small army. During the warmer months I may set the crock pot outside. But come Fall, I love the heat the crock pot adds to our trailer. It’s just enough to make the small space of our camper feel cozy. And the aroma is Heavenly!
I Wanted to celebrate Fall and cooler temperatures so I turned to my Crock pot.
Copying our favorite pizza flavor of chicken & bacon with ranch dressing, I started playing with ingredients. My simple method of cooking is this: must be easy, minimal ingredients, minimal mess, great on flavor. Try this recipe and tell me if you don’t think it hits all these.
Chicken Bacon Ranch Alfredo
- 5 chicken breasts, frozen
- 1 – 8 oz. cream cheese, cut into cubes
- 1 – 16 oz. jar alfredo sauce
- 1/4 cup real bacon bits
- 1 pkg. Ranch dressing.
Place all ingredients in crock pot. Set on low for eight hours or high for 5 hours.
Remove lid and add 1 cup of shredded cheese. I like to combine parmesan and cheddar. Replace lid for half hour or melted. Using two forks, break up chicken and stir all together.
At this point, you may serve the chicken alfredo over cooked spaghetti, which is my husbands favorite. Or try my favorite way by serving the chicken on a bun, sloppy joe style.
