PUMPKIN PIE SQUARES
As a newlywed, my mother-in-law shared many recipes with me. She would also give me cookbooks every birthday and every Christmas. I never minded these new editions to my ever-growing library as I loved to cook and bake.
My husband is a picky eater…meat. potatoes and corn, nothing green touches his plate. With such limited menu items to cook for him, I became a baker, with cookies being my favorite form of baked goods.
Most of the cookbooks are gone now, replaced by the internet. We live fulltime in the RV, so keeping 600 cookbooks just was not logistically possible. Unfortunately, in getting rid of so many, I’ve lost a few of my favorite recipes that I have not been able to find on the internet.
Farm Journal Cookbooks are the best!
I thought I had lost this cookbook forever, and along with it, the recipe for Pumpkin Pie Squares. So before it disappears again, I snapped pictures. I hope you and your family make this recipe a family tradition, as it will be again for us.
